Jodhpuri gatte ki sabzi



Jodhpuri Gatte Ki Sabji

Gatte ki sabji is traditional marwari dish. Easy to make and so tasty. This dish needs basic ingredients like gram flour and curd. This recipe is made in two simple steps.


Ingredients - (serve for 2)
Cooking time - 30 minutes

For gatta -
Besan (gram flour) - 250gm
Red chili powder - ½ spoon
Ajwain (carom seeds) - ¼ tea spoon
Hing (asafoetida) - ¼ tea spoon
Oil - 1 table spoon
Salt - ¼ tea spoon (according to taste)
Water - as desire

For gravy-
Dahi (curd) - half cup
Lahsun (Garlic) paste - ½ tea spoon
Adrak (ginger) paste - ¼ tea spoon
Green chili - 1 finely chopped
Cumin seeds - ¼ tea spoon
Red chili powder - ½ tea spoon
Turmeric powder - ¼ tea spoon
Coriander powder -1 tea spoon
Salt - ½ tea spoon or according to taste
Coriander leaf - finely chopped

How to make gatta-
1.     Mix well all (for gatta) ingredients together except water in a bowl. Than add water (besan requaire less water so take a little bit) and make soft dough.
2.     Now devide dough in four portions and give them cylindrical shape (gatta).
3.     Boil water in a pan and put cylindrical shape (gatta) dough in it (the dough shoud be immersed in water). Cover it and cook for 15 mins in medium heat.
4.     After 15 minutes cut it in ½ intch pieces. Don’t throw access water. Keep aside.

How to make gatte ki sabji-
1.     Mix garlic paste, ginger paste, green chili, red chili powder, turmeric powder, coriander powder and salt in curd.
2.     Heat oil in a pan add cumin seeds. After sizzleing cumin seeds put curd mixture in pan.
3.     Cook it until the oil separates. Now add gatta and access water in pan. Heat it for 15 minutes (put as much water as you want).
4.     Garnish with finely chopped coriander leaf. Serve hot with rice or roti (Indian bread).
